My name is Max and I am a European trained Chef who migrated to Australia in 1984 to help open large 5 star hotels in Australia.
After working in every state and territory in our wonderful country I settled down 23 years ago in the northern suburbs of Perth operating my own family style restaurants in Innaloo and Inglewood.
For the last 17 years I worked as the Director of Culinary Arts at Perth’s only true Private Training Provider.
During my time at the college I had the opportunity to travel to different countries and visit culinary schools all over the world.
My travels in 2012 took me to America and Mexico where I visited different Culinary Schools, but I was completely taken by the school in Tijuana.
Tijuana is a twin city with San Diego, bordering California. It is the city were the Caesar salad originated and you can taste the true version in store today.
During my time there I fell in love with Mexican flavours and the secret of toasting and roasting of spices and chillies. I was able to learn the true Mexican cuisine and history from Javier the owner of the School of Culinary Arts Tijuana.
He introduced me to what Mexican cuisine is all about and his chefs produced some very memorable and long-lasting experiences of REAL spicy food.
On my return to Perth I started immediately researching and experimenting with new recipes and I got really excited and enthusiastic. My fantastic wife suggested, “Why we don’t open another restaurant?” And well, I thought what a brilliant idea and here we are – so let’s get down to business and cook.
My research into the different cuisine style let me design new recipes which reflect today’s modern and healthy cooking methods.
The style of EL MEXICANO is based on what is known as Baja Cuisine, which is Californian influenced Mexican Cuisine. We combine the flavours of Mexico, but use modern techniques to give you a unique experience.
All our products are prepared daily in our state of the art oven. The use of slow roasting methods, enhances the product and ensures the highest nutritional value is kept.
